I
am often asked about my background and about my
major influences or cooking styles.
As a New American Chef I focus on the use of regional, seasonal, and, when
available, organic ingredients. I feel that preparing dishes with minimal manipulation allows the character of the ingredients
to shine.
My
profession has encouraged me to travel abroad extensively. My travels in Europe and Asia have taught me a
respect for ingredients and the purity of food that we as Americans often take for granted in our quest for convenience and
accessibilty.
I am a CIA graduate with over fifteen years of experience
in the industry. During my career, I have worked at multiple Five Star and Five Diamond properties including The Little
Nell and the Boca Raton Resort and Club.
Good fortune
allowed me to apprentice at the Azienda Agrituristica Montali in Tavernelle di Panicale, Italy. On this working
organic farm and country inn, we produced seventy-five percent of
our own produce, our own olive oil and some of our own cheeses.
As a result, I have a great love for the foods of Northern
and Central Italy.
I have participated in numerous competitions
and, most recently, was awarded the "Most Creative" title in a battle in Kansas City.
I have also been featured on the Food Network's "Holidays in the Rockies" special.
I have had the honor to cook for Nelson Mandela, the Dalai Lama, Al Gore, Oprah Winfrey,
Colin Powell, Bill Gates,
and Martha Stewart, among others.
My true joy comes from sharing my passion for food with others. I enjoy preparing dishes from scratch
with only the finest of ingredients. I hope that someday soon Aspen Private Chef.Com will be invited
